Join guest instructor, Chef David Mincey for a new way of looking at food that will revolutionize the way you cook and the taste of your food.  We will examine the creation of a dish from its beginnings in the imagination of a chef through to its execution and all the fine tunings in between. We will learn how to integrate the elements of sweet, spicy, salty, sour and bitter into food creating interest and balance on the palate. We will discuss the mysterious food element umami and how to use it to elevate the intensity of a dish. The role of texture and mouth-feel will be covered as well as the interplay between temperature and flavour.

Note:  Some light food samples will be served during the lesson but we recommend you eat prior to class.

This advanced course would appeal to home cooks who have already mastered basic cooking techniques.
